Lacto Ovo Vegetarian Project - Day 1

My husband is once again on a business trip. Actually 2 in the same week.
I have been considering becoming a semi-vegetarian, at least for a month. Honestly, I wold like to do it just to see how my body feels. The whole animal thing is a side benefit, and I don't mean to offend anyone. I figured it might be a good time. I don't have to worry about feeding him, since I am not sure he want to try the vegetarian diet/lifestyle. My daughter doesn't eat a lot but loves rice, so we're all set there. I feel the lacto ovo vegetarian approach might be better for me, at least in the beginning.

So grocery shopping we went. Yesterday I wrote some ideas for meals so I had a list. Bought some produce: oranges, bananas, peppers, cucumbers, tomatoes, romaine lettuce. Canned beans, mushrooms... As a snack I ate a vegan hot dog. I had to swallow hard, at least the first bite! After that I drank water after each bite. At the end it wasn't that bad. Bit I will try another brand, maybe a veggie one. It wasn't until I got here that I realize they were vegan and not veggie. But again, I have no clue as to how different they will taste.

So today's menu is 4 bean salad, yeah why 3, when you can do 4! And pasta with mozzarella cheese and tomatoes. It ended kinda salty... this one I haven't done before and was really looking forward to it. Oh well... And this will be on a bed of lettuce and tomatoes, and maybe cucumbers. That's one hell of a salad! For lunch I will try the vegan burger, although I must admit I am very scared.

Tomorrow I might do some burritos or fajitas. And I should make some rice to feed the little one.
Oh! And I haven't told my husband about my project. Let's see how it goes today.
